Bulgarian Garash Cake

Ingredients
- 14 pcs egg whites ((from medium-sized eggs))
- 1 pinch salt
- 16 g vanilla sugar
- 280 g sugar
- 580 g ground walnuts
- 40 g cornstarch
- 300 g sugar (for the cream)
- 16 g vanilla sugar (for the cream)
- 14 pcs egg yolks
- 350 ml cream
- 400 g dark chocolate ((56% cocoa))
- 300 g butter (for the cream)
- 100 g chocolate ((40% cocoa for the glaze))
- 100 g butter (for the glaze)
- 1 to taste pistachio crumb (for decoration)
Method

Preheat the oven to 170°C (340°F) with convection or to 175°C (350°F) without convection.

Whip the egg whites with a pinch of salt until peaks form.

Gradually add the vanilla sugar and sugar, whipping to a strong foam.

Mix the ground walnuts and cornstarch, gently fold into the egg white mixture.

Pour the batter into the mold and bake for about 12-15 minutes at 170°C or 20 minutes at 175°C.

For the cream, whip the egg yolks with sugar and vanilla sugar.

Heat the cream and melt the chocolate, add to the yolk mixture and mix well.

Then add the butter and optionally cognac.

For the glaze, melt the chocolate with the butter and mix until smooth.

Assemble the cake, applying cream on each layer, pour glaze on top, and decorate with pistachio crumb.
