Ingredients
- 600g strawberries
- 180g cashew nuts
- 20g coconut oil
- 200g maple syrup
- 1/2 vanilla beans
- 100g raspberries
- 30g maple syrup (for raspberry sauce)
Method
- Blend all the ice cream ingredients together in a blender.
- Pour the mixture into an ice cream maker and freeze for about 20 minutes.
- Blend raspberries and maple syrup to make a sauce.
- Gently fold the ice cream and raspberry sauce together. Do not overmix.
- Freeze the ice cream in the freezer until firm.
