- 3 large eggs
- 1/4 tsp salt
- 1 x 380g can sweetened condensed milk
- 150g butter, melted and slightly cooled
- 200g plain flour
- 1 tbsp baking powder
- 1 tbsp lemon juice
- Butter and flour or baking paper, for preparing the tin
- Icing sugar, optional, for serving
Method
- Preheat the oven to 180°C conventional or 160°C fan.
- Grease and flour a loaf tin, or line it with baking paper.
- Place the eggs and salt in a large bowl.
- Whisk until the eggs are pale, light and foamy.
- Gradually whisk in the sweetened condensed milk.
- Pour in the melted butter and mix until fully incorporated.
- Sift together the flour and baking powder.
- Gradually fold the dry ingredients into the egg mixture until no dry flour remains.
- Fold in the lemon juice to make a smooth, glossy batter.
- Pour the batter into the prepared loaf tin and level the surface.
- Bake for 45–50 minutes, until golden and a skewer inserted into the centre comes out clean.
- Leave the loaf in the tin for approximately 10 minutes.
- Transfer it to a wire rack and allow it to cool before slicing.
- Dust with icing sugar before serving, if desired.
