  • 3 large eggs
  • 1/4 tsp salt
  • 1 x 380g can sweetened condensed milk
  • 150g butter, melted and slightly cooled
  • 200g plain flour
  • 1 tbsp baking powder
  • 1 tbsp lemon juice
  • Butter and flour or baking paper, for preparing the tin
  • Icing sugar, optional, for serving

Method

14 steps
  1. Preheat the oven to 180°C conventional or 160°C fan.
  2. Grease and flour a loaf tin, or line it with baking paper.
  3. Place the eggs and salt in a large bowl.
  4. Whisk until the eggs are pale, light and foamy.
  5. Gradually whisk in the sweetened condensed milk.
  6. Pour in the melted butter and mix until fully incorporated.
  7. Sift together the flour and baking powder.
  8. Gradually fold the dry ingredients into the egg mixture until no dry flour remains.
  9. Fold in the lemon juice to make a smooth, glossy batter.
  10. Pour the batter into the prepared loaf tin and level the surface.
  11. Bake for 45–50 minutes, until golden and a skewer inserted into the centre comes out clean.
  12. Leave the loaf in the tin for approximately 10 minutes.
  13. Transfer it to a wire rack and allow it to cool before slicing.
  14. Dust with icing sugar before serving, if desired.
