  • 2 apples, sliced into thick chunks
  • a couple of tablespoons of sugar
  • a touch of cinnamon
  • vanilla seeds (from scraping out a vanilla pod)
  • lemon zest
  • fresh lemon juice
  • dried cranberries
  • 2 tablespoons of Demerara sugar
  • butter
  • crumble topping: flour, Demerara sugar, cinnamon, butter

Method

6 steps
  1. Cook grated apple in a pan with sugar, cinnamon, vanilla seeds, and lemon zest and juice until caramelized and soft.
  2. Slice 2 apples into thick chunks and add to the pan with dried cranberries, lemon zest, and lemon juice. Mix well and set aside.
  3. Prepare crumble topping by rubbing butter into flour with Demerara sugar and cinnamon until breadcrumb-like. Mix in muesli or granola if using.
  4. In the pan with apple and cranberry mixture, turn on the heat until bubbling around the edges.
  5. Transfer the mixture to an ovenproof dish, then evenly spread the crumble topping over it.
  6. Bake at 200°C for 12-14 minutes until golden brown and bubbling.
