Ingredients
- 2 apples, sliced into thick chunks
- a couple of tablespoons of sugar
- a touch of cinnamon
- vanilla seeds (from scraping out a vanilla pod)
- lemon zest
- fresh lemon juice
- dried cranberries
- 2 tablespoons of Demerara sugar
- butter
- crumble topping: flour, Demerara sugar, cinnamon, butter
Method
- Cook grated apple in a pan with sugar, cinnamon, vanilla seeds, and lemon zest and juice until caramelized and soft.
- Slice 2 apples into thick chunks and add to the pan with dried cranberries, lemon zest, and lemon juice. Mix well and set aside.
- Prepare crumble topping by rubbing butter into flour with Demerara sugar and cinnamon until breadcrumb-like. Mix in muesli or granola if using.
- In the pan with apple and cranberry mixture, turn on the heat until bubbling around the edges.
- Transfer the mixture to an ovenproof dish, then evenly spread the crumble topping over it.
- Bake at 200°C for 12-14 minutes until golden brown and bubbling.
