- 2 onions
- 1 cup oat flour
- 2 eggs
- Salt, to taste
- Black pepper, to taste
- 1 cup breadcrumbs
- 70 g cheddar cheese, grated
- Basil, to taste
- Paprika, to taste
- Dried garlic, to taste

- [Dip] Salt and black pepper, to taste
- [Dip] Juice of 1/2 lemon
- [Dip] 1 teaspoon Greek yogurt
- [Dip] Sun-dried tomatoes, quantity not specified

Method
- Preheat the oven to 200°C or 400°F and line a baking sheet with parchment paper.
- Cut the top and bottom from each onion while keeping the root end intact.
- Make evenly spaced cuts to form petals, using wooden skewers as stops so the onion is not cut through.
- Lower the onions into boiling water for a few seconds, transfer them to cold water and leave for 15 minutes.
- Coat each onion thoroughly with oat flour.
- Beat the eggs with salt and pepper, then work the egg mixture between the onion petals.
- Combine breadcrumbs, grated cheddar, basil, paprika and dried garlic.
- Coat the onions thoroughly with the breadcrumb and cheese mixture.
- Bake on the prepared tray for 20 minutes.
- Mash the avocado and combine it with lemon juice, yogurt, salt, pepper, chopped sun-dried tomatoes and parsley.
- Serve the hot onion blooms with the avocado yogurt dip.
