  • [Dip] 1 teaspoon Greek yogurt
  • [Dip] Sun-dried tomatoes, quantity not specified

Method

11 steps
  1. Preheat the oven to 200°C or 400°F and line a baking sheet with parchment paper.
  2. Cut the top and bottom from each onion while keeping the root end intact.
  3. Make evenly spaced cuts to form petals, using wooden skewers as stops so the onion is not cut through.

  5. Coat each onion thoroughly with oat flour.
  6. Beat the eggs with salt and pepper, then work the egg mixture between the onion petals.
  7. Combine breadcrumbs, grated cheddar, basil, paprika and dried garlic.
  8. Coat the onions thoroughly with the breadcrumb and cheese mixture.
  9. Bake on the prepared tray for 20 minutes.
  10. Mash the avocado and combine it with lemon juice, yogurt, salt, pepper, chopped sun-dried tomatoes and parsley.
  11. Serve the hot onion blooms with the avocado yogurt dip.
