Ingredients
- 3 pcs eggs
- to taste tsp salt
- to taste tsp black pepper
- to taste tsp turmeric
- 150 ml milk
- 2 pcs zucchini
- 1 pcs onion
- to taste tbsp olive oil
- 1 pcs carrot (grated)
- 2 cloves garlic (chopped)
- 1 pcs yellow bell pepper (finely chopped)
- 1 pcs tomato
- to taste tsp Italian herbs
- to taste tsp green onions
Method
- Mix the eggs in a bowl.
- Add 150 ml of milk to the eggs and mix well.
- Take 2 zucchini, slice them, and sprinkle with salt. Leave for 10 minutes.
- Chop 1 onion and set aside.
- Grate 1 carrot on a coarse grater.
- Heat some olive oil in a skillet and fry the onion and grated carrot for 3-5 minutes.
- Finely chop 2 garlic cloves and add to the skillet, cooking for another 2 minutes.
- Finely chop 1 yellow bell pepper and add to the mix.
- Chop 1 tomato and combine everything in the skillet. Mix thoroughly.
- Add black pepper and Italian herbs to taste.
- Finally, add the zucchini and mix well.
- Bake in the oven for 25-30 minutes at 180°C (350°F).
