- 250g Red beans
- 1 Onion
- Olive oil
- 1 Zucchini
- 1 Sweet red pepper
- 1 Clove of garlic
- 3 tbsp Tomato sauce
- Salt to taste
- Freshly ground pepper
- 4 tbsp Chickpea flour
- 2 tbsp Nutritional yeast
- 1 tsp Dried ground paprika
- 2 tbsp Olive oil
Method
- Preheat the oven to a suitable baking temperature.
- Chop the onion, zucchini, sweet red pepper, and garlic.
- Sauté the onion and garlic in olive oil until softened.
- Add the zucchini and sweet red pepper and cook until tender.
- Add the red beans and tomato sauce to the vegetable mixture.
- Season with salt and freshly ground pepper to taste.
- Transfer the mixture to a baking dish.
- In a separate bowl, mix chickpea flour, nutritional yeast, dried ground paprika, and olive oil to make the crumb topping.
- Sprinkle the crumb topping evenly over the bean mixture.
- Bake until the topping is golden and crispy.
