  • 250g Red beans
  • 1 Onion
  • Olive oil
  • 1 Zucchini
  • 1 Sweet red pepper
  • 1 Clove of garlic
  • 3 tbsp Tomato sauce
  • Salt to taste
  • Freshly ground pepper
  • 4 tbsp Chickpea flour
  • 2 tbsp Nutritional yeast
  • 1 tsp Dried ground paprika
  • 2 tbsp Olive oil

Method

    Preheat the oven to a suitable baking temperature.

    Chop the onion, zucchini, sweet red pepper, and garlic.

    Sauté the onion and garlic in olive oil until softened.

    Add the zucchini and sweet red pepper and cook until tender.

    Add the red beans and tomato sauce to the vegetable mixture.

    Season with salt and freshly ground pepper to taste.

    Transfer the mixture to a baking dish.

    In a separate bowl, mix chickpea flour, nutritional yeast, dried ground paprika, and olive oil to make the crumb topping.
