  • 2 kg pork ribs
  • water
  • soy sauce
  • tomato ketchup
  • ginger, sliced
  • curry powder

  • black pepper
  • brown sugar
  • beer

  • marbled potatoes

  • heavy cream

  • spring onions, chopped

Method

8 steps
  1. Cut the pork ribs into halves if they are thick, or use whole if your cookware is large enough.
  2. Prepare a pot with water, soy sauce, tomato ketchup, sliced ginger, curry powder, smoked paprika, black pepper, and brown sugar.
  3. Pour beer into the pot and bring to a boil to tenderize the ribs, then lower the heat and simmer for 1 1/2 to 2 hours or use a pressure cooker for about 45 minutes to 1 hour.
  4. While ribs are cooking, boil salted water with marbled potatoes until fork tender, then mash with butter, garlic, spring onions, and heavy cream. Season with salt and black pepper.
  5. Once ribs are tender, remove from the broth and transfer to a sheet pan.
  6. Reduce the broth until thickened to make barbecue sauce, then brush or baste the ribs with the sauce.
  7. Heat a grill pan or use a blow torch to grill the ribs for a smoky flavor, basting with sauce as needed.
  8. Serve the ribs with mashed potatoes, garnished with parsley, carrots, and extra sauce if desired.
