- 2¼ cups all-purpose flour (270g)
- 4 teaspoons baking powder
- ¼ cup sugar (50g)
- ¾ teaspoon salt
- 2 cups milk (480ml)
- ½ cup oil ((vegetable or canola) (120ml))
- 2 large eggs (separated)
- 2 teaspoons vanilla extract
Method
- Preheat your waffle maker to a crisper setting, around 3.
- In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
- Separate the eggs, placing the yolks in a medium bowl and the whites in a smaller bowl.
- Add the egg yolks to the dry ingredients and mix gently.
- In a separate bowl, whisk together the milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, folding in the egg whites carefully to lighten the batter.
- Once the waffle maker is heated and ready, lightly grease if necessary.
- Pour about a third to two-thirds of a cup of batter onto the waffle iron, depending on its size.
- Close the waffle maker and cook until steam dissipates and the waffle is golden brown, about 3-5 minutes.
- Carefully remove the waffle and place on a wire rack to stay crisp.
- Repeat with remaining batter.
