Italian Apple Cake with Vanilla Custard

Ingredients

• 2 eggs
• 1/2 cup sugar (100 g)
• 2 tbsp yogurt (90 g)
• 1/3 cup sunflower oil (80 ml)
• 170 g flour
• 10 g baking powder (2 tsp)
• 2 apples
• juice of 1 lemon
• 1 egg
• 3 tbsp sugar (60 g)
• 1 tbsp cornstarch (20 g)
• 200 ml milk
• 1 tbsp sugar (20 g)
• 1 tsp powdered sugar for garnish
• a pinch of salt

Method

1. Preheat oven to 180°C (356°F).
2. Line a 24 cm (9.5 inch) baking pan with parchment paper.
3. Mix 2 eggs with 1/2 cup sugar until creamy.
4. Add yogurt and sunflower oil, mix well.
5. Combine flour, baking powder, and salt; add to wet ingredients and mix.
6. Peel and slice apples, toss with lemon juice.
7. Pour half the batter into the pan.
8. Add apple slices evenly over the batter.
9. Cover apples with remaining batter.
10. In a saucepan, mix 1 egg, 3 tbsp sugar, cornstarch, milk, and 1 tbsp sugar.
11. Cook over medium heat, stirring constantly until thickened to make pudding cream.
12. Pour pudding cream over the cake batter.
13. Bake for 40 minutes at 180°C.
14. Cool and dust with powdered sugar before serving.
