Cabbage and Eggs Pie

Ingredients

• 2 tbsp Olive oil
• 1 medium Onion
• 1 Carrot
• 2 lb / 900g white cabbage
• 5-6 Eggs
• 1 tbsp All purpose Flour (optional)
• Manchego cheese (optional)
• Fresh parsley (optional)
• Salt and black pepper
• 1/2 tsp Oregano
• 1/2 tsp Sweet Paprika
• 1/2 tsp Garlic powder
• 1/2 tsp Onion powder
• 1/2 tsp Dry Parsley

Method

1. Add the onions to a pan and sauté for about 5 minutes until translucent.
2. Grate the carrot and add to the pan, cook for 2 more minutes.
3. Add the white cabbage to the pan and cook for 10-12 minutes, stirring occasionally.
4. Season with salt, black pepper, oregano, paprika, garlic powder, onion powder, and dried parsley.
5. In a bowl, beat the eggs and add the cooked cabbage mixture, mixing well.
6. Optional: Add 1 tablespoon of all-purpose flour to the mixture.
7. Pour the mixture into a pan and cook for 2 minutes until the bottom sets.
8. Transfer the pan to a preheated oven at 400°F/200°C and bake for 4 minutes.
9. Optional: Add fresh parsley and Manchego cheese on top.
10. Finish under the broiler for 1 minute until the cheese melts.
11. Sprinkle with additional fresh parsley before serving.
