- 4 large oranges, preferably unwaxed or organic
- 2 cups granulated sugar, divided
- 1 cup water
Method
- Wash and scrub the oranges thoroughly, then dry them.
- Cut away the peel in sections and slice it into even strips.
- Place the peel in a saucepan, cover with fresh water and bring to a boil. Drain, then repeat once or twice to reduce bitterness.
- Combine 1 cup sugar with 1 cup water in a clean saucepan and bring to a boil.
- Add the drained orange peel and reduce the heat to a gentle simmer.
- Simmer for 45–60 minutes, until the peel is tender and translucent. Avoid stirring vigorously, as this can cause the syrup to crystallise.
- Lift the peel from the syrup with tongs and arrange it separately on a wire rack or baking paper.
- Allow the peel to cool until tacky but no longer dripping.
- Roll the strips in the remaining sugar and leave them to dry completely before storing.
