  • 4 large oranges, preferably unwaxed or organic
  • 2 cups granulated sugar, divided
  • 1 cup water

Method

  1. Wash and scrub the oranges thoroughly, then dry them.
  2. Cut away the peel in sections and slice it into even strips.
  3. Place the peel in a saucepan, cover with fresh water and bring to a boil. Drain, then repeat once or twice to reduce bitterness.
  4. Combine 1 cup sugar with 1 cup water in a clean saucepan and bring to a boil.
  5. Add the drained orange peel and reduce the heat to a gentle simmer.
  6. Simmer for 45–60 minutes, until the peel is tender and translucent. Avoid stirring vigorously, as this can cause the syrup to crystallise.
  7. Lift the peel from the syrup with tongs and arrange it separately on a wire rack or baking paper.
  8. Allow the peel to cool until tacky but no longer dripping.
  9. Roll the strips in the remaining sugar and leave them to dry completely before storing.

Additional tips

  • Boiling sugar syrup can cause severe burns. Handle the peel with tongs and allow it to cool before touching. Use unwaxed oranges or scrub the fruit thoroughly.
