Cheesy Ground Beef and Potato Casserole

Ingredients

• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp smoked paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 tbsp Worcestershire sauce
• 2 tbsp tomato paste
• 1/2 cup beef broth
• 4-5 medium golden potatoes, cubed
• 1 tbsp salt (for boiling water)
• 1 tbsp olive oil
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1 can (10.5 oz) cream of mushroom soup
• 1/2 cup milk
• 1 cup shredded cheddar cheese
• 1/2 cup shredded mozzarella cheese
• 1/2 cup gouda cheese
• Chopped fresh parsley for garnish

Method

1. Preheat the oven to 375°F (190°C).
2. Place the cubed potatoes in a saucepan of salted water.
3. Boil until just tender, then drain thoroughly.
4. Toss the potatoes with olive oil, salt and black pepper.
5. Cook the ground beef, onion and garlic in a large frying pan until the beef is browned.
6. Drain excess fat if necessary.
7. Season with salt, black pepper, smoked paprika, garlic powder and onion powder.
8. Stir in the Worcestershire sauce and tomato paste.
9. Add the beef broth and simmer briefly.
10. Transfer the beef and potatoes to a baking dish.
11. Mix the cream of mushroom soup and milk until smooth.
12. Pour the sauce evenly over the beef and potatoes.
13. Top with cheddar, mozzarella and Gouda.
14. Bake for 35–40 minutes, until bubbling and golden.
15. Garnish with parsley before serving.
