Method
- Add softened butter, light brown sugar, and granulated sugar to a bowl and whisk together.
- Add one egg, one egg yolk, and almond extract; whisk these in.
- Add plain flour and ground almonds; mix until just combined.
- Fold in glacé cherries.
- Scoop the mixture into a baking tray and smooth it out.
- Dollop cherry jam into the mixture and swirl it through with a knife.
- Top with more cherries if desired.
- Bake in the oven for 25 minutes.
- Pipe on icing made with icing sugar and water.
