Ingredients

  • 4 chicken drumsticks
  • 4 bone-in, skin-on chicken thighs
  • 20 cloves of garlic, heavily crushed
  • small fresh crack of black pepper
  • 1 tbsp or 7 g of whole black peppercorns
  • 3 tbsp or 50 g of palm sugar
  • 1 1/4 cup or 300 mL of unseasoned rice vinegar
  • 1/4 cup or 60 mL of dark soy sauce
  • half a cup or 120 mL of regular soy sauce
  • 4 bay leaves

Method

  1. Combine chicken, garlic, black pepper, black peppercorns, palm sugar, rice vinegar, dark soy sauce, regular soy sauce, water, and bay leaves in a large bowl.
  2. Cover with plastic wrap and marinate in the fridge for 2 hours or overnight.
  3. Reserve the marinating liquid.
  4. Heat a large brazer or Dutch oven over medium-high heat with enough oil to coat the bottom.
  5. Sear all chicken pieces in batches for 2-3 minutes per side until browned.
  6. Remove chicken and set aside.
  7. Add the reserved marination liquid to the pan and bring to a boil.
  8. Arrange the seared chicken snugly in the pan.
  9. Bring to a boil, then reduce heat to simmer and cook until the chicken is tender and the sauce has thickened.
