Ingredients
- 4 chicken drumsticks
- 4 bone-in, skin-on chicken thighs
- 20 cloves of garlic, heavily crushed
- small fresh crack of black pepper
- 1 tbsp or 7 g of whole black peppercorns
- 3 tbsp or 50 g of palm sugar
- 1 1/4 cup or 300 mL of unseasoned rice vinegar
- 1/4 cup or 60 mL of dark soy sauce
- half a cup or 120 mL of regular soy sauce
- 4 bay leaves
Method
- Combine chicken, garlic, black pepper, black peppercorns, palm sugar, rice vinegar, dark soy sauce, regular soy sauce, water, and bay leaves in a large bowl.
- Cover with plastic wrap and marinate in the fridge for 2 hours or overnight.
- Reserve the marinating liquid.
- Heat a large brazer or Dutch oven over medium-high heat with enough oil to coat the bottom.
- Sear all chicken pieces in batches for 2-3 minutes per side until browned.
- Remove chicken and set aside.
- Add the reserved marination liquid to the pan and bring to a boil.
- Arrange the seared chicken snugly in the pan.
- Bring to a boil, then reduce heat to simmer and cook until the chicken is tender and the sauce has thickened.
