- 100g egg whites (~3 egg whites)
- pinch of salt
- 1 tsp lemon juice
- vanillin or vanilla sugar
- 200g powdered sugar
- 2 tbsp cornstarch
- 100g frozen raspberries
- 10g sugar
- 5g cornstarch
- 300g heavy cream (33%)
- sugar to taste
- crushed cookies
Method
- Beat egg whites with salt, lemon juice, and vanilla until light foam forms.
- Gradually add powdered sugar and beat for 10-15 minutes until stiff peaks form.
- Mix in cornstarch briefly on medium speed.
- Pipe meringue into shell shapes.
- Bake at 90C (194F) for about 2 hours.
- Cook frozen raspberries with sugar and cornstarch on medium heat until thickened, then cool.
- Beat heavy cream with sugar until stiff peaks form, do not overbeat.
- Place half of the meringue shells on crushed cookies.
- Pipe cream onto meringue shells.
- Assemble pavlova by covering cream with second half of meringue shells.
- Decorate with berries if desired.
- Serve immediately to keep meringue crisp.
