  • 100g frozen raspberries
  • 10g sugar
  • 5g cornstarch
  • 300g heavy cream (33%)
  • sugar to taste
  • crushed cookies

Method

    Beat egg whites with salt, lemon juice, and vanilla until light foam forms.

    Gradually add powdered sugar and beat for 10-15 minutes until stiff peaks form.

    Mix in cornstarch briefly on medium speed.

    Pipe meringue into shell shapes.

    Bake at 90C (194F) for about 2 hours.

    Cook frozen raspberries with sugar and cornstarch on medium heat until thickened, then cool.
