Ingredients
- 100g egg whites (~3 egg whites)
- pinch of salt
- 1 tsp lemon juice
- vanillin or vanilla sugar
- 200g powdered sugar
- 2 tbsp cornstarch
- 100g frozen raspberries
- 10g sugar
- 5g cornstarch
- 300g heavy cream (33%)
- sugar to taste
- crushed cookies
Method

Beat egg whites with salt, lemon juice, and vanilla until light foam forms.

Gradually add powdered sugar and beat for 10-15 minutes until stiff peaks form.

Mix in cornstarch briefly on medium speed.

Pipe meringue into shell shapes.

Bake at 90C (194F) for about 2 hours.

Cook frozen raspberries with sugar and cornstarch on medium heat until thickened, then cool.

Beat heavy cream with sugar until stiff peaks form, do not overbeat.

Place half of the meringue shells on crushed cookies.

Pipe cream onto meringue shells.

Assemble pavlova by covering cream with second half of meringue shells.

Decorate with berries if desired.

Serve immediately to keep meringue crisp.
