Ingredients
- 100g egg whites (~3 egg whites), room temperature
- pinch of salt
- 1 tsp lemon juice
- 170g powdered sugar
- 100g frozen raspberries
- 5g cornstarch
- 150g heavy cream (33%)
- sugar to taste
- strawberries
- confectionery sprinkles
- powdered sugar
Method
- Beat egg whites with salt and lemon juice until light foam forms.
- Gradually add powdered sugar in small portions while beating.
- Beat for 10-15 minutes until stiff peaks form.
- Spoon meringue onto parchment paper.
- Bake at 100C (212F) for about 2 hours.
- Cook frozen raspberries with cornstarch on medium heat until thickened.
- Cover raspberry filling with cling film and let cool.
- Beat heavy cream with sugar to stiff peaks without overbeating.
- Spread raspberry filling on baked meringue.
- Pipe whipped cream on top of raspberry filling.
- Place a strawberry on top to resemble a Santa hat.
- Decorate with confectionery sprinkles and sprinkle with powdered sugar.
