- 100g egg whites (~3 egg whites), room temperature
- pinch of salt
- 1 tsp lemon juice
- 170g powdered sugar
- 100g frozen raspberries
- 5g cornstarch
- 150g heavy cream (33%)
- sugar to taste
- strawberries
- confectionery sprinkles
- powdered sugar
Method

Beat egg whites with salt and lemon juice until light foam forms.

Gradually add powdered sugar in small portions while beating.

Beat for 10-15 minutes until stiff peaks form.

Spoon meringue onto parchment paper.

Bake at 100C (212F) for about 2 hours.

Cook frozen raspberries with cornstarch on medium heat until thickened.

Cover raspberry filling with cling film and let cool.

Beat heavy cream with sugar to stiff peaks without overbeating.

Spread raspberry filling on baked meringue.

Pipe whipped cream on top of raspberry filling.

Place a strawberry on top to resemble a Santa hat.

Decorate with confectionery sprinkles and sprinkle with powdered sugar.
