Ingredients
- ½ cup butter
- 1 medium onion, finely diced
- 4 stalks celery, finely diced
- 1 cup chopped fresh parsley
- 2 tsp dried summer savoury
- Salt (see note, below)
- 12 to 14 cups bread crumbs and cubes
- 1 cup or more turkey drippings or turkey or chicken stock
Method
- Melt the butter in a very large, wide frying pan over medium.
- Add onions and celery and cook slowly, stirring occasionally, until vegetables are completely tender.
- Remove the heat and stir in the parsley and savoury.
- Combine the cooked vegetables and herbs with the bread in a giant mixing bowl.
- Stir gently but thoroughly.
- Transfer the mixture to a greased 9 x 13-inch baking dish (or similar).
- Drizzle the drippings over the dressing.
- Cover tightly with foil and bake at 325F for 30 minutes.
- Remove the foil and bake for another 5 to 20 minutes or until it’s as crispy on top as you like.
