- COFFEE PASTRY
- 100 g butter, cold and cubed
- 200 g plain flour
- 40 g sugar
- 1 egg yolk
- 1 tsp instant coffee
- 2 tbsp water
- 5 g vanilla sugar
- 1/3 tsp baking powder
- COFFEE CUSTARD
- 300 ml milk
- 50 g sugar
- 25 g cornflour
- 1 tbsp instant coffee
- 1 egg yolk
- 30 g butter
- 10 g vanilla sugar
- CHOCOLATE DECORATION
- 80 g white chocolate
- 1 1/2 tbsp vegetable oil
- 40 g dark chocolate
- 1 tbsp vegetable oil
Method
- Preheat the oven to 200°C (400°F).
- Combine the flour, sugar, baking powder, vanilla sugar and instant coffee.
- Rub or cut in the cold butter until crumbly.
- Add the egg yolk and water.
- Mix until a dough forms.
- Divide the dough between eight tartlet moulds.
- Press it evenly over the bases and sides.
- Bake for approximately 10 minutes.
- Leave the tart shells to cool.
- For the custard, whisk the sugar, cornflour, coffee and egg yolk.
- Gradually whisk in the milk.
- Cook over medium-low heat while stirring continuously.
- Continue cooking until thickened.
- Remove from the heat.
- Stir in the butter and vanilla sugar.
- Divide the coffee custard between the tart shells.
- Melt the white chocolate with its vegetable oil.
- Drizzle the white chocolate over the tartlets.
- Melt the dark chocolate with its vegetable oil.
- Drizzle over the white chocolate.
- Leave to set before serving.
