Smoked Cottage Cheese Flatbread with Sausage and Bacon
A high-protein cottage cheese and egg flatbread topped with cooked sausage, crispy bacon, mild cheddar and Gouda. It is cooked on a smoker until firm and golden, then rested before slicing for an easy barbecue breakfast or brunch.

Ingredients
- 1 cup cottage cheese
- 2 large eggs
- Kings BBQ King of the Beef Rub, to taste
- Wagyu tallow or another cooking fat, for greasing
- Cooked breakfast sausage, crumbled, to taste
- Cooked bacon, crumbled, to taste
- Mild cheddar cheese, grated, to taste
- Gouda cheese, grated, to taste
Method
- Preheat a griddle or frying surface over medium-high heat.
- Cook the sausage until browned and completely cooked through, breaking it into small pieces as it cooks.
- Cook the bacon until crisp.
- Transfer the cooked sausage and bacon to a plate and allow them to cool slightly.
- Preheat the smoker to 180°C (350°F).
- Line a 9 x 12-inch baking pan with parchment paper.
- Lightly coat the parchment and sides of the pan with Wagyu tallow.
- Place the cottage cheese, eggs and beef seasoning in a blender or tall blending jug.
- Blend until the mixture is smooth and evenly combined.
- Pour the cottage cheese mixture into the prepared pan.
- Spread the mixture into an even layer with a silicone spatula.
- Crumble the cooked bacon and sausage evenly over the surface.
- Sprinkle the grated mild cheddar and Gouda over the meat.
- Place the pan in the preheated smoker.
- Smoke for approximately 30 minutes, until the flatbread is set in the centre and the cheese is melted and lightly golden.
- Remove the pan from the smoker.
- Leave the flatbread to rest in the pan for 10–15 minutes so it firms up.
- Lift the flatbread out using the parchment paper.
- Slice into portions and serve warm.
