Ingredients
8 ingredients- 1 cup cottage cheese
- 2 large eggs
- Kings BBQ King of the Beef Rub, to taste
- Wagyu tallow or another cooking fat, for greasing
- Cooked breakfast sausage, crumbled, to taste
- Cooked bacon, crumbled, to taste
- Mild cheddar cheese, grated, to taste
- Gouda cheese, grated, to taste

- Pellet smoker or conventional oven
- Griddle or large frying pan
- 9 x 12-inch baking pan
- Parchment paper
- Blender or immersion blender
- Tall blending jug, if using an immersion blender
- Silicone spatula
- Heatproof spatula

Method
19 steps- Preheat a griddle or frying surface over medium-high heat.
- Cook the sausage until browned and completely cooked through, breaking it into small pieces as it cooks.
- Cook the bacon until crisp.
- Transfer the cooked sausage and bacon to a plate and allow them to cool slightly.
- Preheat the smoker to 180°C (350°F).
- Line a 9 x 12-inch baking pan with parchment paper.
- Lightly coat the parchment and sides of the pan with Wagyu tallow.
- Place the cottage cheese, eggs and beef seasoning in a blender or tall blending jug.
- Blend until the mixture is smooth and evenly combined.
- Pour the cottage cheese mixture into the prepared pan.
- Spread the mixture into an even layer with a silicone spatula.
- Crumble the cooked bacon and sausage evenly over the surface.
- Sprinkle the grated mild cheddar and Gouda over the meat.
- Place the pan in the preheated smoker.
- Smoke for approximately 30 minutes, until the flatbread is set in the centre and the cheese is melted and lightly golden.
- Remove the pan from the smoker.
- Leave the flatbread to rest in the pan for 10–15 minutes so it firms up.
- Lift the flatbread out using the parchment paper.
- Slice into portions and serve warm.
Helpful tips
- Cook the sausage and bacon fully before adding them to the flatbread.
- Crumble the meat into small pieces so it distributes evenly across the surface.
- Blend the cottage cheese and eggs until smooth for the most even texture.
- Grease both the parchment and exposed sides of the pan to make removal easier.
- Spread the batter to a consistent thickness so it cooks evenly.
- Avoid adding large piles of meat or cheese, as heavy toppings can make the centre difficult to set.
- Check the centre before removing the flatbread from the smoker; it should feel firm rather than liquid.
- Allow the flatbread to rest for the full 10–15 minutes before slicing.
- Use the parchment paper to lift the flatbread cleanly from the pan.
Storage
Allow the flatbread to cool completely before storing. Refrigerate sliced portions in an airtight container for up to 3 days. Reheat in a frying pan, oven, air fryer or microwave until piping hot throughout. Freeze individual portions for up to 2 months, separated with parchment paper, and thaw overnight in the refrigerator before reheating.
