- 320g cottage cheese
- 1 egg
- 30g dried tomatoes
- 10g parsley
- 1 garlic clove
- salt and black pepper to taste
- 1 teaspoon psyllium husk
- 20-25g almond flour
- 2 tablespoons Greek yogurt
- 30ml whey from cottage cheese
- 1 cucumber, grated and squeezed
- 50-70g shredded mozzarella
- 15-20g spinach
- 7 cherry tomatoes
- vegetable oil
Method

Mix the cottage cheese slightly and add dried tomatoes, parsley, garlic, salt, pepper, psyllium husk, and almond flour. Let it sit for 10 minutes.

Shape the mixture into patties on a floured surface and fry in vegetable oil until browned on both sides.

For the omelet, whisk 2 eggs with 45-60ml whey, add shredded mozzarella and spinach.

Pour the egg mixture into a greased baking dish, add halved cherry tomatoes on top, sprinkle remaining cheese, and bake at 180°C (350°F) for 15 minutes.
