Cannellini Beans, bunch Fresh Spinach, Cherry or Grape Tomatoes, yellow onion, heaping spoon of Ricotta.
Ingredients
- 2 cans Cannellini Beans (drained and rinsed)
- 1 bunch Fresh Spinach
- 1 cup Cherry or Grape Tomatoes (halved)
- 1/2 yellow onion (chopped)
- 1 heaping spoon of Ricotta
- 1 tbsp Tomato Paste
- 1/4 cup White Wine
- 1/4 cup Water
- Olive Oil
- Salt & Chili Pepper
- Bread (for serving)
Method
- Sauté onion and chili pepper in olive oil until fragrant.
- Add spinach and cook until just wilted.
- Pour in white wine and let it simmer for 1 minute to cook off the alcohol.
- Stir in tomatoes, tomato paste, and water.
- Add beans, season with salt and pepper, and let everything meld together.
- Turn off the heat and stir in the ricotta.
- Drizzle with extra virgin olive oil and serve warm with plenty of bread.
