Ingredients

  • 2 cans Cannellini Beans (drained and rinsed)
  • 1 bunch Fresh Spinach
  • 1 cup Cherry or Grape Tomatoes (halved)
  • 1/2 yellow onion (chopped)
  • 1 heaping spoon of Ricotta
  • 1 tbsp Tomato Paste
  • 1/4 cup White Wine
  • 1/4 cup Water
  • Olive Oil
  • Salt & Chili Pepper
  • Bread (for serving)

Method

  1. 1

    Sauté onion and chili pepper in olive oil until fragrant.

    Add spinach and cook until just wilted.

  3. 3

    Pour in white wine and let it simmer for 1 minute to cook off the alcohol.

    Stir in tomatoes, tomato paste, and water.

    Add beans, season with salt and pepper, and let everything meld together.

    Turn off the heat and stir in the ricotta.

    Drizzle with extra virgin olive oil and serve warm with plenty of bread.
