- Olive Oil, - Clarified Unsalted Butter, - Small to Medium Sized Brown Onion, Finely Diced, Large Cloves - Garlic, Thinly Sliced, Tbs - Flat Leaf Parsley, Chopped.

- 1 Tbsp (14ml) - Olive Oil
- 2 Tbsp (28g) - Clarified Unsalted Butter
- 1 - Small to Medium Sized Brown Onion, Finely Diced
- 3 Large Cloves - Garlic, Thinly Sliced (6 - 7 Cloves if you like it very strong)
- 2 Tbs (4g) - Flat Leaf Parsley, Chopped
- 2 tsp (3g) - Thyme, Chopped
- 2 Tbs - White Wine
- 400ml - Full Fat Cream (Thickened Cream)
- Salt & Pepper To Taste
Method
- Heat the olive oil and butter in a pan over medium heat.
- Add the finely diced brown onion and cook until translucent.
- Stir in the sliced garlic and cook until fragrant.
- Add the chopped parsley and thyme, and mix well.
- Pour in the white wine and let it simmer for a few minutes.
- Reduce the heat and add the full fat cream, stirring to combine.
- Season with salt and pepper to taste.
- Allow the sauce to gently simmer until thickened.
- Serve over steak, chicken, fish, vegetables, or as a pasta sauce.
