  • 1 Tbsp (14ml) - Olive Oil
  • 2 Tbsp (28g) - Clarified Unsalted Butter
  • 1 - Small to Medium Sized Brown Onion, Finely Diced
  • 3 Large Cloves - Garlic, Thinly Sliced (6 - 7 Cloves if you like it very strong)
  • 2 Tbs (4g) - Flat Leaf Parsley, Chopped
  • 2 tsp (3g) - Thyme, Chopped
  • 2 Tbs - White Wine
  • 400ml - Full Fat Cream (Thickened Cream)
  • Salt & Pepper To Taste

Method

9 steps
  1. Heat the olive oil and butter in a pan over medium heat.
  2. Add the finely diced brown onion and cook until translucent.
  3. Stir in the sliced garlic and cook until fragrant.
  4. Add the chopped parsley and thyme, and mix well.
  5. Pour in the white wine and let it simmer for a few minutes.
  6. Reduce the heat and add the full fat cream, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Allow the sauce to gently simmer until thickened.
  9. Serve over steak, chicken, fish, vegetables, or as a pasta sauce.

Storage

Refrigerate in an airtight container for up to 3 days. Reheat gently over low heat while stirring.
