- 1 tablespoon butter
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 450 grams minced beef
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon oregano
- ½ teaspoon thyme
- 1 pinch chili flakes
- 1 teaspoon smoked paprika
- 2 tablespoons tomato paste
- 720 ml beef stock
- 480 ml passata
- 240 ml heavy cream
- 1 tablespoon Worcestershire sauce
- 250 grams thin spaghetti
- fresh parsley for garnish
- grated parmesan for serving
Method
- Melt the butter in a large deep pan or saucepan over medium heat.
- Add the finely diced onion and cook for 2–3 minutes, until translucent.
- Add the minced garlic and cook for about 30 seconds, until fragrant.
- Add the minced beef and cook for 5–7 minutes, breaking it into small pieces, until browned.
- Season with the salt, black pepper, oregano, thyme, chilli flakes and smoked paprika.
- Stir in the tomato paste and cook for 1 minute.
- Pour in the beef stock, passata, heavy cream and Worcestershire sauce.
- Stir well and bring the sauce to a gentle boil.
- Add the spaghetti, pressing it into the liquid as it begins to soften.
- Reduce the heat to low and simmer for 5–7 minutes, or until the pasta is al dente, stirring frequently.
- Add a splash of hot water or stock if the sauce thickens before the pasta is fully cooked.
- Taste and adjust the seasoning.
- Serve with chopped parsley and grated Parmesan.
