- 1 lb boneless skinless chicken breast
- 2 lemons (1 for garnish, 1 zested and juiced)
- 1 lb rigatoni pasta
- 1 head roasted garlic
- 1 shallot
- 1/4 cup parsley
- 1 cup parmesan
- 1/2 cup asiago
- 1/2 stick butter
- 1 tsp chicken bouillon powder
- 1 cup dry white wine
- 1 to 1.5 cups heavy cream
- red pepper flakes
Method
- Cook rigatoni pasta according to package instructions and drain.
- Season and cook chicken breasts until done, then slice.
- Sauté shallot and roasted garlic in butter until fragrant.
- Add chicken bouillon powder and white wine; simmer to reduce.
- Stir in heavy cream, parmesan, asiago, lemon zest, and lemon juice.
- Add cooked pasta and sliced chicken to the sauce; toss to coat.
- Garnish with parsley, lemon slices, and red pepper flakes.
- Serve immediately.
