- 1 cup Arborio rice
- 4 cups chicken or vegetable stock
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 2 tbsp butter
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh herbs (parsley, thyme, or basil), chopped
- Salt and pepper to taste
Method
- Preheat oven to 350°F (175°C).
- Combine rice, stock, lemon zest, lemon juice, olive oil, and butter in a baking dish.
- Season with salt and pepper and stir to combine.
- Cover tightly with foil and bake for 40 minutes.
- Remove from oven and stir in Parmesan cheese and fresh herbs.
- Let sit for 5 minutes before serving.
