Ingredients
- 1 cup Arborio rice
- 4 cups chicken or vegetable stock
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 2 tbsp butter
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh herbs (parsley, thyme, or basil), chopped
- Salt and pepper to taste
Method

Preheat oven to 350°F (175°C).

Combine rice, stock, lemon zest, lemon juice, olive oil, and butter in a baking dish.

Season with salt and pepper and stir to combine.

Cover tightly with foil and bake for 40 minutes.

Remove from oven and stir in Parmesan cheese and fresh herbs.
