Ingredients
- 250 g tagliatelle
- 2 tbsp olive oil
- 2 garlic cloves
- Zest of one lemon
- 2 tbsp lemon juice
- 5.1 fl oz vegan cream (oat or soy)
- 1 tsp turmeric for the yellow color
- 1 tsp sweet paprika
- Salt
- Freshly ground black pepper
- 1 tsp chili flakes
- Dried baby chilies or chunky chili pieces (to top)
- Fresh thyme sprigs (to top)
- A little vegan Parmesan powder (optional, to top)
- Extra black pepper (to top)
Method
- Cook the tagliatelle according to the package instructions.
- In a pan, heat olive oil and sauté minced garlic until fragrant.
- Add lemon zest, lemon juice, turmeric, and sweet paprika to the pan.
- Pour in the vegan cream and stir until well combined.
- Season with salt, freshly ground black pepper, and chili flakes.
- Mix in the cooked tagliatelle, ensuring the pasta is well coated in the sauce.
- Serve topped with dried baby chilies, fresh thyme sprigs, and a sprinkle of vegan Parmesan powder if desired.
- Finish with extra black pepper to taste.
