- 2 large chicken breast fillets (approx. 250 g / 9 oz each)
- Salt
- Pepper
- Paprika powder
- Flour
- 1 tbsp butter
- 1 tbsp olive oil
- 3 cloves of garlic
- 50 ml (3 tbsp) chicken stock
- 200 ml (¾ cup) cream
- 1 tsp Dijon mustard
- 50 g (½ cup) freshly grated Parmesan
- 1 tsp lemon juice
- Rosemary
- Parsley
Method
- Season the chicken breast fillets with salt, pepper, and paprika powder.
- Dust the chicken lightly with flour.
- Heat 1 tbsp of butter and 1 tbsp of olive oil in a pan over medium heat.
- Fry the chicken for 4-5 minutes per side until golden brown.
- Remove the chicken and set aside.
- In the same pan, briefly fry 3 cloves of garlic until fragrant.
- Add 50 ml of chicken stock and 200 ml of cream to the pan.
- Stir in 1 tsp of Dijon mustard.
- Add 50 g of freshly grated Parmesan and stir until the sauce is creamy.
- Incorporate 1 tsp of lemon juice and mix well.
- Place the fried chicken back in the pan and simmer in the sauce for 5 minutes.
- Sprinkle with rosemary and parsley before serving.
