These crispy chickpea vegetable fritters are golden and crunchy on the outside, soft on the inside, and packed with flavor. They are vegan, gluten-free, and can be pan-fried, baked, or air-fried.

Ingredients
- 1 (15 oz) can chickpeas (drained and rinsed)
- ½ medium onion
- 2 cloves of garlic
- Juice of ½ lime
- 1 tsp onion powder
- 1 tsp ground cumin
- ½ tsp ground oregano
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes
- ½-⅔ tsp salt
- Black pepper to taste
- ½-⅔ cup (60-80 g) chickpea flour
- 1 medium pepper, chopped
- 1 cup (150 g) corn (fresh or canned)
- 2-3 Tbsp parsley, chopped
- Oil for frying
Method
- Drain and rinse the chickpeas.
- Add chickpeas, onion, garlic, lime juice, onion powder, cumin, oregano, smoked paprika, red pepper flakes, salt, and black pepper to a food processor.
- Process until combined but still slightly chunky.
- Transfer mixture to a bowl and stir in chickpea flour, chopped pepper, corn, and parsley.
- Form the mixture into fritters.
- Heat oil in a pan over medium heat.
- Pan-fry the fritters until golden and crispy on both sides.
- Alternatively, bake or air-fry the fritters as preferred.
