Ingredients

  • 1/2 cup raw chickpeas (100g)
  • 1/2 cup raw lentils (100g)
  • 1/4 cup chopped mushrooms (30g)
  • 1/2 small onion
  • 1 garlic clove
  • 2 tbsp chickpea flour
  • Chopped parsley
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp black pepper
  • Salt to taste

Method

  1. Do not over-blend the mixture to preserve texture.
  2. Combine raw chickpeas, raw lentils, chopped mushrooms, onion, garlic, chickpea flour, parsley, soy sauce, olive oil, mustard, smoked paprika, ground coriander, black pepper, and salt.
  3. Chill the mixture before shaping for better structure.
  4. Shape the mixture into 6 patties.
  5. Cook the patties on medium heat, pressing while cooking to create a crispy crust.
  6. Cook until golden outside and tender inside, about 15 minutes.
