Ingredients
- 2 large sweet potatoes ((300 g each, approx. 21 oz total))
- 2 tbsp olive oil
- to taste salt

- 1 tsp garlic powder
- 120 g cashews (soaked (4.2 oz))
- 150 ml hot water ((5 fl oz))
- 1 large garlic clove
- 1 tbsp lemon juice
- 1 tsp nutritional yeast
- to taste salt
- to taste pepper
- 2 tbsp panko breadcrumbs
- 1 tsp black sesame seeds
- 1 tsp olive oil
- parsley (to serve)
- lemon zest (to serve)
Method

Preheat your oven to 200°C (392°F).

Slice the sweet potatoes into thick steaks.

Toss the sweet potato steaks with olive oil, salt, pepper, paprika, and garlic powder.

Place the seasoned sweet potato steaks on a baking tray.

Bake for 25 minutes, until soft and lightly browned.

Meanwhile, prepare the garlic cashew cream by blending soaked cashews, hot water, garlic, lemon juice, nutritional yeast, salt, and pepper until creamy.

For the crunch topping, mix panko breadcrumbs, sesame seeds, and olive oil.

Sprinkle the crunch topping over the baked sweet potatoes and return to the oven for a few minutes.

Serve with parsley and lemon zest on top.
