- 2 large sweet potatoes ((300 g each, approx. 21 oz total))
- 2 tbsp olive oil
- to taste salt

- 1 tsp sweet paprika
- 1 tsp garlic powder
- 120 g cashews (soaked (4.2 oz))
- 150 ml hot water ((5 fl oz))
- 1 large garlic clove
- 1 tbsp lemon juice
- 1 tsp nutritional yeast
- to taste salt

- 2 tbsp panko breadcrumbs
- 1 tsp black sesame seeds
- 1 tsp olive oil
- parsley (to serve)
- lemon zest (to serve)
Method
- Preheat your oven to 200°C (392°F).
- Slice the sweet potatoes into thick steaks.
- Toss the sweet potato steaks with olive oil, salt, pepper, paprika, and garlic powder.
- Place the seasoned sweet potato steaks on a baking tray.
- Bake for 25 minutes, until soft and lightly browned.
- Meanwhile, prepare the garlic cashew cream by blending soaked cashews, hot water, garlic, lemon juice, nutritional yeast, salt, and pepper until creamy.
- For the crunch topping, mix panko breadcrumbs, sesame seeds, and olive oil.
- Sprinkle the crunch topping over the baked sweet potatoes and return to the oven for a few minutes.
- Serve with parsley and lemon zest on top.
