- 750g (1.6lb) Beef Mince, 5% Fat
- 5-6 Spring Onions, White Parts Finely Sliced, Green Parts Reserved
- 25g (0.9oz) Fresh Ginger, Finely Grated
- 2 Tbsp (30ml) Shaoxing Wine
- 1 Tbsp (15ml) Low Sodium Light Soy Sauce
- 1 Tbsp (15ml) Low Sodium Dark Soy Sauce
- 1 tsp (5ml) Avocado Oil or Neutral Oil
- 3 Tbsp (48g) Peanut Butter
- 2 Tbsp (30ml) Chilli Crisp
- 2 tsp (8g) Sugar
- 5 Garlic Cloves, Grated
- 1 tsp (5ml) Sesame Oil
- 1 Tbsp (15ml) Rice Wine Vinegar
- 50ml (1.7fl oz) Reserved Noodle Water, To Loosen
- 450g (15.9oz) Fresh Ramen Noodles
- 2-3 Baby Bok Choy, Halved Lengthways
- 1 Cucumber, Julienned (Optional)
- Chilli Crisp, Extra, To Serve
Method
- Cook the beef mince in a pan until browned.
- Add finely sliced white parts of spring onions and grated ginger to the beef, cooking for a few minutes.
- Pour in Shaoxing wine, soy sauces, and cook until the liquid reduces slightly.
- Prepare the Dan Dan sauce by mixing peanut butter, chilli crisp, sugar, soy sauces, grated garlic, sesame oil, rice wine vinegar, and reserved noodle water until smooth.
- Halve the baby bok choy lengthways and cook until tender.
- Combine cooked noodles with the beef mixture and Dan Dan sauce, mixing well.
- Serve topped with sliced spring onion greens, julienned cucumber (if using), and extra chilli crisp.
