Delicious Cinnamon Swirl Cake

Ingredients

• 130g Butter (½ cup, 1 tablespoon)
• 130g Sugar (½ cup, 2 ½ tablespoons)
• 3 Eggs
• 1 teaspoon Vanilla extract
• 175g Plain flour (1 cup, 3 tablespoons)
• 1 teaspoon Baking powder
• 50g Melted Butter (3 and ½ tablespoons)
• 2 teaspoons Cinnamon powder
• 75g Dark brown sugar (4 tablespoons)
• ½ teaspoon Almond essence (optional)
• 2 tablespoons Plain flour
• Flaked Almonds (optional)

Method

1. Cream together butter and sugar.
2. Whisk for 3-4 minutes.
3. Add whisked eggs and vanilla extract, then whisk well.
4. Mix plain flour and baking powder slightly.
5. Whisk for about 15 seconds.
6. For the cinnamon swirl, mix the melted butter, cinnamon, dark brown sugar, almond essence if using, and 2 tablespoons of flour until combined.
7. Mix well.
8. Add half the batter to the baking pan.
9. Place blobs/spoonfuls of the cinnamon mix on top.
10. Repeat the steps with the remaining batter.
11. Create a little swirling with a knife.
12. Sprinkle flaked almonds on top if using.
13. Bake in a preheated oven at 170°C (338°F) for 35-40 minutes.
