- 130g Butter (½ cup, 1 tablespoon)
- 130g Sugar (½ cup, 2 ½ tablespoons)
- 3 Eggs
- 1 teaspoon Vanilla extract
- 175g Plain flour (1 cup, 3 tablespoons)
- 1 teaspoon Baking powder
- 50g Melted Butter (3 and ½ tablespoons)
- 2 teaspoons Cinnamon powder
- 75g Dark brown sugar (4 tablespoons)
- ½ teaspoon Almond essence (optional)
- 2 tablespoons Plain flour
- Flaked Almonds (optional)
Method
- Cream together butter and sugar.
- Whisk for 3-4 minutes.
- Add whisked eggs and vanilla extract, then whisk well.
- Mix plain flour and baking powder slightly.
- Whisk for about 15 seconds.
- Add melted butter and cinnamon powder.
- Mix well.
- Add half the batter to the baking pan.
- Place blobs/spoonfuls of the cinnamon mix on top.
- Repeat the steps with the remaining batter.
- Create a little swirling with a knife.
- Sprinkle flaked almonds on top if using.
- Bake in a preheated oven at 170°C (338°F) for 35-40 minutes.
