- 265 g flour
- 57 g cocoa
- 12 g baking powder
- 4 pieces eggs
- 1 pinch salt
- 10 g vanilla
- 220 g sugar
- 145 ml milk (room temperature)
- 90 g butter
- 500 g cranberries
- 150 g sugar
- 100 ml water
- 20 g gelatin
- 2 pieces bananas
- 600 g cream cheese or mascarpone
- 100 g powdered sugar
- 3 g vanilla
- 200 g cold cream (33–35 % fat)
- 2 teaspoons orange spice
- 75 g dark chocolate
- 50 g cream (33–35 % fat)
Method
- Preheat the oven to 175 °C (347 °F).
- Combine the cake ingredients (flour, cocoa, baking powder, eggs, salt, vanilla, sugar, milk, butter) in a bowl.
- Pour into a 22-cm pan and bake for 40 minutes.
- Meanwhile, cook cranberries with sugar and water, reduce, and let cool.
- Soak gelatin in water, then dissolve it in the cranberry mixture.
- Slice banana and place on the cooled cake.
- Mix cream cheese or mascarpone with powdered sugar and vanilla.
- Whip cold cream until stiff and fold into the cream cheese mixture.
- Spread the mixture over the cake and chill for 4-5 hours.
- Decorate the cake with melted dark chocolate and cream.
