  • 265 g flour
  • 57 g cocoa
  • 12 g baking powder
  • 4 pieces eggs
  • 1 pinch salt
  • 10 g vanilla
  • 220 g sugar
  • 145 ml milk (room temperature)
  • 90 g butter
  • 500 g cranberries
  • 150 g sugar
  • 100 ml water
  • 20 g gelatin
  • 2 pieces bananas
  • 600 g cream cheese or mascarpone
  • 100 g powdered sugar
  • 3 g vanilla
  • 200 g cold cream (33–35 % fat)
  • 2 teaspoons orange spice
  • 75 g dark chocolate
  • 50 g cream (33–35 % fat)

Method

    Preheat the oven to 175 °C (347 °F).

    Combine the cake ingredients (flour, cocoa, baking powder, eggs, salt, vanilla, sugar, milk, butter) in a bowl.

    Pour into a 22-cm pan and bake for 40 minutes.

    Meanwhile, cook cranberries with sugar and water, reduce, and let cool.

    Soak gelatin in water, then dissolve it in the cranberry mixture.

    Slice banana and place on the cooled cake.

  7. 7

    Mix cream cheese or mascarpone with powdered sugar and vanilla.

    Whip cold cream until stiff and fold into the cream cheese mixture.

    Spread the mixture over the cake and chill for 4-5 hours.

    Decorate the cake with melted dark chocolate and cream.
