  • 8 cups thinly sliced cabbage (about Β½ large head or 1 small head)
  • 1 medium onion, thinly sliced
  • 2 medium carrots, shredded or cut into matchsticks
  • 3–5 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 teaspoons soy sauce
  • 1 teaspoon rice vinegar
  • 2 tablespoons olive oil (or another neutral cooking oil, such as avocado, grapeseed, or vegetable oil)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Thinly sliced scallion greens, for garnish

Method

    Heat olive oil in a pan over medium heat.

    Add thinly sliced onion and cook until softened.

    Add minced garlic and cook until fragrant.

    Add shredded carrots and cook briefly until slightly tender.
