  • 8 cups thinly sliced cabbage (about ½ large head or 1 small head)
  • 1 medium onion, thinly sliced
  • 2 medium carrots, shredded or cut into matchsticks
  • 3–5 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 teaspoons soy sauce
  • 1 teaspoon rice vinegar
  • 2 tablespoons olive oil (or another neutral cooking oil, such as avocado, grapeseed, or vegetable oil)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Thinly sliced scallion greens, for garnish

Method

8 steps
  1. Heat olive oil in a pan over medium heat.
  2. Add thinly sliced onion and cook until softened.
  3. Add minced garlic and cook until fragrant.
  4. Add shredded carrots and cook briefly until slightly tender.
  5. Add thinly sliced cabbage and stir-fry until wilted but still crisp.
  6. Drizzle sesame oil, soy sauce, and rice vinegar over the vegetables and stir to combine.
  7. Season with kosher salt and freshly ground black pepper to taste.
  8. Garnish with thinly sliced scallion greens before serving.
