- 8 cups thinly sliced cabbage (about ½ large head or 1 small head)
- 1 medium onion, thinly sliced
- 2 medium carrots, shredded or cut into matchsticks
- 3–5 cloves garlic, minced
- 1 teaspoon sesame oil
- 2 teaspoons soy sauce
- 1 teaspoon rice vinegar
- 2 tablespoons olive oil (or another neutral cooking oil, such as avocado, grapeseed, or vegetable oil)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Thinly sliced scallion greens, for garnish
Method
- Heat olive oil in a pan over medium heat.
- Add thinly sliced onion and cook until softened.
- Add minced garlic and cook until fragrant.
- Add shredded carrots and cook briefly until slightly tender.
- Add thinly sliced cabbage and stir-fry until wilted but still crisp.
- Drizzle sesame oil, soy sauce, and rice vinegar over the vegetables and stir to combine.
- Season with kosher salt and freshly ground black pepper to taste.
- Garnish with thinly sliced scallion greens before serving.
